Cajun Chicken with Chunky Salsa

Cajun Chicken with Chunky Salsa


–  2 single chicken breast fillets (340g)
–  ½ tsp cracked black pepper
–  1 tbs finely chopped fresh oregano
–  1 tsp sweet paprika
–  ½ tsp dried chilli flakes
–  1 clove garlic, crushed
–  1 tsp olive oil

Chunky Salsa

–  1 medium tomato, chopped coarsely
–  ½ small red onion, chopped coarsely
–  ½ medium green capsicum, chopped coarsely
–  1 tbs coarsely chopped fresh coriander
–  1 tsp olive oil
–  1 tbs lime juice


1. Place chicken in a large bowl with combined remaining ingredients, toss chicken to coat in mixture. Cover, refrigerate 15 minutes.

2. Meanwhile, make chunky salsa by combining all ingredients in a bowl.

3. Cook chicken in large lightly oiled nonstick pan until cooked through. Serve chicken with chunky salsa.
